Apple slices with Banana and Avocado Dip!!

Today I forgot to bring my lunch. Luckily, we had avocados in the fruit box at work! I decided to try a new combination (new for me atleast). I took an avocado and a banana and made a dip for apple slices!

Heres all you need:
  • 1 apple
  • 1 banana
  • 1 avocado
Put the avocado and banana in a bowl. It works best if the banana is ripe enough to be soft. Smash the avocado and banana together until it is the consistency you like. Cut up the apple slices, dip in and enjoy!

Experiment #4: Banana Apple Quesadilla with Almonds and Honey

Another experiment that went well today. I brought an apple and banana for breakfast but i hadn't eaten it by lunch time.

Here are the ingredients to this dish:


  • 1 small banana, sliced
  • 1/2 a large flour tortilla, or 1 small flour tortilla
  • a handful of almonds, rinsed and cut in half
  • 2 or 3 packets of honey
  • 1/2 an apple, cut into small pieces (preferably cut off the skin, but its ok to leave on)
Spread the honey on the flour tortilla, then add bananas, almonds, and apple pieces. Wrap in some foil and bake in toaster oven or regular oven at 450 for 5 minutes. You can also take it out of a toaster oven if it is taking too long and put it in the microwave for 30 seconds to a minute to finish it off(this is what i did because the toaster oven took too much time to heat up).


Tasted great, one of the best dishes I've made so far at work! Let me know what you think if you try it.

Experiment #2 Honey Mustard Hamburger with Lettuce and Tomatoe

We had hamburgers the night before. I had brought in some of the fixings (vegetables) but had forgotten the bun.. So i cut up the hamburger into bite sized pieces. I added the following sauce to the hamburger pieces:

  • One mayo packet (I found it in the drawer)
  • One mustard packet (I found it in the drawer)
  • Crushed red pepper (ditto)
  • Honey packet (they are on the shelf)
  • Salt (on the shelf)
  • Black pepper
  • a litle bit of hot water
I then combined and mixed all this up in a bowl with some white onion pieces i had cut up for fixings for the hamburgers from the night before. I put all of this on a metal tray in the toaster oven and set it to broil for 10 minutes on 325 degrees. It turned out it tasted great! Try it and let me know what you think!
Experiment #1: Chicken with Honey and Crushed Red Pepper

The other day I came to work and at lunch time i realized I had about a dozen chicken tenders that were by that time dried out and fairly tasteless. This was because I had baked them a few days previous and I hadn't used enough seasoning at the time. So I decided to rejuvenate them! The nice thing is that we have a new toaster oven with convection heating in the break room! I combined the following ingrediants in a paper bowl i found at work:

  • Crushed red pepper (we had it in one of the drawers)
  • Honey (we have it on the shelf for use with tea)
  • Black Pepper (it was on the countertop)
  • Salt (ditto)
  • hot water
I then poured this on the chicken tenders. I placed it in the convection oven and heated it up for about 7 minutes. I should have turned the heat up higher and used foil (i used 300 degrees or so) but next time i will use a higher temp and foil. I don't have a picture ( I will try to remember to do this next time). It tasted pretty good! Next time i might add some olive oil.
Welcome to my new blog on leftover lunches. Here I will be showing off my new creations from - you guessed it- left overs from the night before! I am a programmer and I spend most of my day in an office. They don't let me out much and I try to save money by not eating out during the week for lunch. My wife is an awesome cook so I have lots of good leftovers. The problem is that leftovers can sometimes get dry, or soggy, depending on whether it is meat or lettuce, etc. Here i will share my experiences with re-juvenating food that i bring n to work!
