Experiment #1: Chicken with Honey and Crushed Red Pepper

The other day I came to work and at lunch time i realized I had about a dozen chicken tenders that were by that time dried out and fairly tasteless. This was because I had baked them a few days previous and I hadn't used enough seasoning at the time. So I decided to rejuvenate them! The nice thing is that we have a new toaster oven with convection heating in the break room! I combined the following ingrediants in a paper bowl i found at work:

  • Crushed red pepper (we had it in one of the drawers)
  • Honey (we have it on the shelf for use with tea)
  • Black Pepper (it was on the countertop)
  • Salt (ditto)
  • hot water
I then poured this on the chicken tenders. I placed it in the convection oven and heated it up for about 7 minutes. I should have turned the heat up higher and used foil (i used 300 degrees or so) but next time i will use a higher temp and foil. I don't have a picture ( I will try to remember to do this next time). It tasted pretty good! Next time i might add some olive oil.
